
Steak with Chimichurri
Juicy steak, herby sauce, crispy potatoes

Ingredients
- 400 gsirloin steak
- 500 gbaby potatoes (halved)
- 1 bunchfresh parsley (finely chopped)
- 2 clovegarlic (minced)
- 2 tbspred wine vinegar
- 80 mlolive oil
- ½ tspchili flakes
- to tastesea salt
Instructions

Roast the potatoes at 220°C until golden and crisp, about 25 minutes.

Stir together the parsley, garlic, vinegar, olive oil, and chili flakes for the chimichurri.

Season the steak generously and sear in a screaming-hot pan, 3 minutes per side.

Rest the steak, slice against the grain, and spoon the chimichurri on top.
Notes
Rest the steak for at least 5 minutes before slicing.
