Oven temperature conversion

350°F is 176.7°C, which recipes and oven dials round to 180°C; going the other way, 180°C is 356°F, so set a Fahrenheit oven to 350°F.

The formulas are °C = (°F − 32) × 5 ÷ 9 and °F = °C × 9 ÷ 5 + 32. Recipes round the result to the nearest 10 degrees, because a home oven swings above and below its set point as the element cycles on and off anyway.

Fan and convection ovens

Most recipes are written for a conventional oven. With the fan on, heat reaches the food faster, so the usual advice is to set the oven about 20°C (25°F) lower, or keep the temperature and check for doneness earlier. British recipes often print both, as in “180°C (160°C fan)”. Some newer ovens adjust for the fan automatically, so check the manual before subtracting twice.

Gas marks

Gas marks run from ¼ to 9 on British gas ovens. From mark 1 up, each step adds 25°F, about 14°C: gas mark 4 is 350°F, roughly 180°C, a common setting for cakes and cookies.

When the conversion isn't the problem

If bakes come out pale or scorched even at the right setting, the oven itself may run hot or cold. An inexpensive oven thermometer on the middle rack will tell you how far off it is, and you can set the dial to compensate.
