Sugar: grams to cups

1 cup of granulated white sugar weighs 198 grams, so 100 g of sugar is 0.51 cups, a hair over ½ cup.

Granulated sugar pours freely and doesn't compress the way flour does, so it's one of the more forgiving ingredients to measure by volume. Scoop it or spoon it and you'll land close to the same weight.

Weights from the King Arthur Baking ingredient weight chart, checked October 7, 2026. King Arthur Baking lists “Sugar (granulated white)” at 1 cup = 198 g. King Arthur Baking lists “Baker's Special Sugar (superfine sugar, castor sugar)” at 1 cup = 190 g. King Arthur Baking lists “Brown sugar (dark or light, packed)” at 1 cup = 213 g. Grams per cup is worked out from their figure; ounces are converted from grams.

Superfine and caster sugar

Superfine sugar, called caster sugar in the UK, has smaller crystals that dissolve faster in meringues, sponges and drinks. King Arthur weighs a cup of it at 190 g, slightly lighter than granulated. Weight for weight the two swap one for one, so if a British recipe calls for 100 g caster sugar and you only have granulated, use 100 g.

Sugar in metric recipes

200 g of sugar is 1.01 cups, which for practical purposes is 1 cup. 150 g is ¾ cup, and 50 g is ¼ cup.

Other sugars weigh differently

Packed brown sugar is heavier (213 g a cup) and powdered sugar much lighter (113 g), so they don't swap for granulated cup for cup. See brown sugar and powdered sugar.
