Spoon and level, don't scoop
Dipping the measuring cup into the bag packs the flour down and gives you well over 120 g, a common reason cookies come out dry and cakes dense. Stir the flour to loosen it, spoon it into the cup until it's heaped, then sweep the top flat with the back of a knife.
Other charts list 125 g or more for a cup of all-purpose flour. Much of that difference comes down to how the cup was filled, which is exactly why bakers who switch to a scale rarely go back.
