Natural or Dutch-process
King Arthur lists one weight for unsweetened cocoa, and the chart here applies to both kinds. They differ in acidity rather than weight: natural cocoa is acidic and often paired with baking soda, Dutch-process is neutralized and often paired with baking powder. Swap them only when the recipe says either will work.
Measure, then sift
Cocoa clumps in the tin. Spoon it into the cup and level it, without packing, and sift it afterwards or whisk it with the flour. Pressing it into the cup squeezes out air and adds weight.
Small amounts are easier to weigh
